Get Your Glow On Glazed Salmon

Fat. Does that word intimidate you? We first let me ask you this- is your hair and skin glowing. Do the words silky, smooth and alive sound about right? If not, it's time to rethink fat and embrace some healthy (and yummy) fat into your life.

Omega-3 fish oil. Go ahead and google it for me. And then, go make this salmon that is queen bee of the healthy fats. Thank me later for the comments you start getting about your new 'glow'.

1 lb boneless, skinless wild Atlantic salmon fillet
1 tbsp real maple syrup (grade B preferably)
1/4 cup aged balsamic vinegar
1 clove garlic, minced
pinch sea salt and fresh cracker pepper

Preheat skillet sprayed with non-stick cooking spray over medium heat. Cut salmon fillet in equal portions (3 or 4). Sprinkle with salt and pepper.

Grill the salmon for about 4 minutes on each side, only flipping once. Mix together the maple syrup, vinegar and garlic.

Turn the heat up to high, pour the maple mixture over the salmon and let reduce until thick, brushing over the salmon.

Serve immediately. Pairs well with steamed brown rice and roasted asparagus.

  1. a dish with only 4 ingredients, not counting the salt and pepper? That's my kind of cooking! Don't you just love when a meal comes together so perfectly and easily?
