This salad is so simple. The dressing is fresh, raw and full of living nutrients! Be creative, any combination of local, fresh organic fruits and vegetables are such a delight!
In this salad (for 1 person):
- organic baby spring greens
- asparagus shreds (use vegetable peeler) + tips
- slivered red onion
- organic strawberries
- slivered almonds
- raw goats cheese
- 1/2 ripe avocado
- juice and zest of orange
- 1 tbsp raspberry vinegar
- 1 tsp local honey
- celtic sea salt and fresh pepper to taste
Blend and massage into salad. Best served at once, in a peaceful setting.
*Round out this salad as a meal by tossing in some grilled chicken for a pretty protein perk!
